The Potato Roll
Ingredients - Red Skinned Potatoes(5lbs), cabbage(1 head), onion(1 whole), garlic(1 clove), butter (1 to 1 1/2 sticks), bacon (8oz, half a package), seasoning (fajita seasoning, garlic salt, onion powder, Sprinkle with Tony Chachere's Creole to taste)
Optional Ingredients - jalapenos, serrano peppers, poblano peppers, squash, zucchini, broccoli, cauliflower, or whatever you are in the mood for
1) Slice everything, potatoes need to be pretty thin and not larger than about 3/8 of an inch, peel them if you like or not
2) The trick to cooking this is that it needs to be sealed air tight so the choice of dish to use can vary. I prefer an aluminum pan from wal-mart because of no clean up. The pan size will vary depending on how many you are cooking for. The normal size for me is 12''x20''x3''. Although I have used a glass pan and baked in the oven too. Works the same.
3) Rub butter all over the bottom of the pan
4) First layer is a small amount of onion, we call them the sacrificial onions because they will burn.
top layer - 1 inch slices of bacon (use about half a package)
next up - 1 to 1 1/2 sticks of butter
next up - seasoning
next up - cabbage
next up - onion
next up - seasoning
next up - potatoes
next up - seasoning
next up - cabbage
next up - onion
next up - seasoning
next up - potatoes
bottom layer - onions but just a few
5) Pile it up high and seal with a foil cover, air tight. The trick is the buter and bacon juices will soak through everything.
6) cook about 350 degrees for 1 hour to 1 1/2 hours depending on size of the roll you made

Colorado Casserole
What you will need:
1 Large glass rectangular pan. PAM for baking. 6 large Chicken breast cut into chunks.
2 cups frozen peas & carrots. 1 cup frozen corn. Tony Cachere's Creole seasoning.
1 Tablespoon dried chives. 1 teaspoon black pepper. 1 box instant mashed potatoes.
3 cans Swanson chicken broth. 4 Tablespoons of Flour. 2-3 cups Mexican cheese blend.
1/4 cup of Hormel real bacon pieces. Aluminum Foil. Enough crescent rolls for everyone.
Follow steps in order
1. Heat oven to 400 degrees.
2. Spray glass pan with PAM for baking.
3. Cut chicken breasts into chunks (however big or small you prefer), I do 1 inch chunks.
4. Place chunks of chicken into greased glass pan and sprinkle with Tony Cachere's Creole seasoning ( a little for flavor, a lot for a kick!).
5. Place pan of seasoned chicken in oven for 10 minutes, flip chicken chunks over and bake another 10 minutes or until chicken is white on the outside.
6. While chicken is cooking, take 1 can of Swanson's chicken broth and whisk in 4 Tablespoons of Flour, 1 Tablespoon of dried Chives, and 1 teaspoon of black pepper.
7. Pull out pan of chicken, pour broth mixture over chicken, add peas & carrots, and corn.
8. Top with 2-3 cups Mexican cheese blend, sprinkle more of Tony Cachere's Creole seasoning over cheese, and add 1/4 cup of Real Bacon pieces.
9. Cover pan with Aluminum foil and bake for 20 - 30 minutes. Let stand for 10 minutes after baking.
10. Now make your instant mashed potatoes, follow directions on box but use Chicken broth in place of water.
Place desired heap of mashed potatoes on plate, spoon casserole mixture over mashed potatoes and enjoy with crescent rolls on the side.
This is very filling and oh so delicious. I invented this tonight and I hope you enjoy it as much as we do.
This will feed 8 hungry people easy!

That is fine Matt, the instant potatoes just make it a quicker recipe, but real mashed potatoes can be made ahead of time. I would strongly suggest using chicken broth in your potatoes along with milk and butter, it gives it an awesome flavor.
And to those of you who are intimidated by this recipe (that only looks big)... give the recipe to your wife or girlfriend and turn in your man card pussies! :rofl:

Just try it Randy... it really turned out great! Besides 2 of the cans of chicken broth go into the potatoes replacing the water that would be used in the potatoes, so calm down! :lol:
You could try to cut the recipe in half or just make it and freeze whats leftover for a quick meal on another night.

I weigh a little over 100 and I drive 100+ everywhere I go. Makes me sound like a skinny speed demon.
If necessary cut the recipe in half, I don't know how it will turn out but it should be fine. Or like I said earlier FREEZE the left overs for a quick dinner on a different night.

Last night was Chicken breast cut into strips.
I marinated it in 2 cloves of fresh garlic (put through garlic press). Crushed red pepper flake, and a pinch of salt. (Marinated for 3 hours).
I also had pasta. Whole wheat Rotini. Boiled in water with a bit of salt and fresh parsley..
Drained pasta, put on plate. Grated fresh Parmesan onto the top of the noodles, a little garlic salt, and black pepper.
Put chicken pieces on top.

Last night would have been a meal worthy of pics. :(
Ground Turkey and Rice (No fancy pants name for it).
1lb Ground Turkey Browned. (Add a lil Salt/Pepper)
2/3 cup uncooked rice
1.5 cups water
1 beef bullion cube (Calls for 2, but I think it can be "too much" some times).
2tsp Soy Sauce
either a small onion diced or onion flake works as well. (to taste desired).
Simmer until rice is cooked. (typically 10-15mins) Just check the rice. (You MAY need to add water, so make sure to check it once in a while to see where its at)
This is typically the main ingredients.
Add this stuff when rice is near cooked. I like my veggies still a bit crunchy so I let them go in about 5 mins before everything was done.
Last night I cut up fresh green beans (1/2 inch or so). (I think I had 6 green beans worth in there)
And red pepper diced up.
Super easy to make. Super quick. I meant to figure out the nutritional value, but I didn't go that far. :lol:
tonight I just did up somethin quick
Salad - Romain Lettuce lil ranch and black pepper.
Sliced up some chicken breast, threw some garlic/cajun seasoning on.
Steamed up some Cauliflower.
Sprinkled a lil garlic salt over the cauliflower, topped off w/ shredded parmasean cheese (however you spell that...)
Here's the cerlerflerler ernd cherkern, you'll have to use your imagination for the salad :lol:

Stuffed Steak. I did not tell you what to season with, everyone knows what they like. I buy a thicker cut of steak, cut a pouch in it. pan fry what u want in it, most people like shrooms and onions. I stuff mine with blue cheese. Shove it in the steak. Here is what people screw up. dont buy cheap bacon. Buy steak cuts or crazy cuts. good bacon should be thick, 6 strips makes a LB. Wrap stuffed steak with bacon. use tooth pics to hold bacon in place. Grill but dont over cook, the cheese will leak out if you over cook it but we still do medium.

Threw some bread slices, pizza sauce, and some cheese on the grill and made 2 "pizza" sandwhiches while i waited for the goods to cook

made some baby back ribs today, can also be done with spare ribs. keep in mind i did it on the smoker.
-rack of ribs, cut off the silver skin and pat down with some paper towel
-mix some greek seasoning and lemon pepper 1:1 in a bowl and rub into both sides of the racks
-set smoker to 300 degrees and put on bone side down for 1 hour
-flip meat side down for 45 min
- set to 450 degrees for 15min or until done
-take out the ribs and baste with squeezed lemon juice or bought lemon juice and let sit for 15min
-enjoy

Drain the grease out. (Some people put it right in w/ the eggs.. I choose not to)
grab yourself 6 eggs.
Crack them suckers into a pan
Dump Chorizo into pan.
Scramble them eggs
Heat yourself up 3 flour tortilla shells
dump eggs onto shells
add a lil cheese (and whatever you'd like)
Add Tapatio hot sauce
DEVOUR.... Soooooo goooood

Pancetta is similar I guess to bacon? Just not smoke cured. More used in italian styled dishes. its really delicious. There's another one called proscito (somethin like that) also very similar. Italian as well.
its amazing. You could replace either with bacon, and it'd still be a winning meal.
