I had to travel to Chile and Panama and just got back this past weekend, will start brewing this weekend so I can pop open a couple of beers for Christmas. Trying the IPA first. Will let you know how it goes Shawn!  :clap:

FYI, from brew day to when you pop the first beer its going to be a month. Month and a half is much better.

IPA's are my favorite! I'm drinking a Boulevard Single Wide IPA as I type. Last weekend I brewed a Ranger IPA.

Hey Shawn, finally had the time yesterday to mix the wort and left it fermenting about 12 hours ago. Temps are a bit low so will move it to where my water heater is so it'll be a bit warmer. Only 2 things that worry me are:
- On the IPA recipe from coopers it said to mix the LME hopped can with 300g of Dextrose and 500g of Light DME, no problem with the LME and the dextrose mixing but the damn DME clumped up awefully! had to fish the clumps out with my spoon, set them up on a sanitized bowl and threw some boiling water over it and got it pretty much diluted there... not happy with that, will mix in slower next time and make sure my water is still hot hot hot! this I think is what caused the second thing thing that worries me:
- The OG was only 1031!!! WTF!!! this beer will have like 3.5% alcohol content, my wife will probably like it. I had already thrown my sanitized spoon and water in the sink so I did not want to re sanitize and throw more dextrose in there to bump up the alcohol. Is it ok to open the fermenter and throw maybe 150g more of dextrose in there without mixing so as not to aereate?

I wouldnt worry about the clumps, they'll all get eaten up in the Primary. Also keep in mind when your boiling you dont have to be 100% sanitary. Your dealing with boiling water and that will kill off any germs that might arise.

As far as the OG, that kinda has me stumped. I've never done a Coopers beer kit, but dealing with other types of kits I'm guessing somewhere along the line too much water was added. Thus giving you the 1031 OG. Did the kit produce more beer than stated? If your beer is sitting in primary you can not add more sugar. That has to go in during the boil. You can add enough sugar during the boil to bring the ABV up 1%, but anything after that and you'll start to taste it.

I'm not a huge fan of the coopers kits. If I were you Id stick with something like this for your next batch.

I followed the instructions as per Coopers: pour 2liters of boiling water in fermenter, add dry sugars (500g of dry malt extract and 300g of dextrose) and dissolve, then add IPA hopped liquid malt extract (1.7kg), mix thoroughly, add water to 23L mark, pour yeast on top and close. I think my OG reading was off because I forgot to fill the test tube amd discard and then refill again to float hydrometer, this must have thrown the reading off right?
